Vineyard Notes: Grown on lean, well-draining soils (like the Haire clay loam of their cool-climate coastal blocks), the vines have to work hard. The extreme diurnal shift (the temperature swing between day and night) causes a painfully slow ripening process. This allows the grapes to develop deep phenolic maturity, complex phenolic character, and incredible texture without spiking in sugar.
