The terroir is defined by ancient calcareous yellow clay soils with a significant presence of sand. These high-altitude, breezy slopes allow for a slow ripening process, preserving the grape's natural acidity and mineral character.
Winemaking Notes: This wine is crafted using certified organic grapes and a minimalist approach. It undergoes spontaneous fermentation with indigenous yeasts in stainless steel tanks, followed by an 18-day skin maceration. To maintain its bright, "easy-going" profile, the wine is aged for 8 months in a combination of stainless steel (70%) and concrete tanks (30%), avoiding any oak influence. It is bottled without clarification or filtration.
