Vineyard Notes: Organic certified. Blend of indigenous grape varieties farmed in limestone soils at 100-400meters in altitude. 7,000 plants/hectare.
Winemaking Notes: Grapes are hand-harvested, gently de-stemmed, and crushed. Fresh grapes undergo maceration and fermentation in a stainless steel vat. The aging process starts with a few months in stainless steel, followed by 6 months in bottle.

Food Pairing: Pair with salads, fish and delcate still flavorsome dishes (tuna steak, tuna tartare). Pizza and pasta dishes with tomato sauces.
