This is the rogue of the collection. Han Solo doesn't follow rules, and neither do Pétillants Naturels—or pet-nat, as the cool kids say.

Where other wines are bottled after a clean, deliberate fermentation, a pet-nat is sealed mid-ferment, allowed to finish under cap, and released with all its rough edges intact. This bottle doesn't care for "Imperial" regulations (Champagne) or fancy filtration (Prosecco).

It is raw, unfiltered, and full of swagger. Lively and unpredictable, it keeps you guessing because you never quite know what you’ll get—and that’s exactly the charm. It bursts into the tasting like the Millennium Falcon flying the Kessel Run in twelve parsecs: a fly-by-the-seat-of-your-pants pour that is impossible not to love.

But beneath the charismatic improvisation is a scrappy elegance. Heidi Schrock’s pet nat walks a narrow tightrope between chaos and control, just as Han’s reckless exterior masks exceptional skill and heroism. This wine is all heart and a hint of polish.
